Drying
The whole cherries (skin, pulp, and beans inside) are spread out on drying beds or patios.
They are dried under the sun for several days to weeks, depending on weather conditions.
The cherries are regularly turned to prevent mold and ensure even drying.

Hulling
After the cherries are completely dried, the outer layers (skin and pulp) are removed, leaving the green coffee beans.
